The Architect of Modern Tiki: Martin Cate and the Legacy of Smuggler’s Cove

By Scott Southworth · October 26, 2026

If Jeff "Beachbum" Berry was the investigative scholar who unearthed the lost history and recipes of mid-century mixology, Martin Cate is the visionary master builder who took that rediscovered foundation and erected the modern Tiki empire.

As a James Beard Award-winning author, rum authority, and bar owner, Cate transformed San Francisco’s Smuggler’s Cove into one of the most celebrated cocktail destinations in the world. In doing so, he elevated Tiki from a nostalgic 20th-century aesthetic into a highly respected, scientifically grounded discipline of modern craft mixology.

Part I: The Path to the Cove

Martin Cate’s obsession with mid-century Tiki design and rum began long before the 21st-century cocktail renaissance took off. Drawn to the immersive theatricality of classic Polynesian Pop venues like Trader Vic's and the Mai-Kai, Cate set out to study the art of atmosphere, lighting, and rum categorization.

In 2006, Cate co-founded Forbidden Island in Alameda, California, proving that there was a hungry audience for authentic, freshly made tropical drinks served in a moody, immersive space.

However, in 2009, Cate and his wife, Rebecca Cate, opened Smuggler’s Cove in San Francisco—a three-story, nautical-and-Polynesian hideaway that would redefine expectations for cocktail bars globally.

Part II: The Rum Categorization System

Before Martin Cate, rum was one of the most misunderstood and poorly categorized spirits in the world. Commercial bars typically grouped rums merely by color ("light," "gold," or "dark")—a misleading approach because color in rum often reflects artificial caramel coloring rather than age or distillation method.

Cate introduced a revolutionary, production-based categorization system that revolutionized how bartenders organize and select rums:

                                 │

     ▼ ▼ ▼
[ POT STILL ] [ COLUMN STILL ] [ BLENDED ]
Heavy, aromatic, ester- Lighter, cleaner profile Mix of pot & column
rich (e.g., Jamaican) (e.g., Spanish-style) stills for balance

By categorizing rums according to still type (pot still, column still, or blended) and aging duration (unaged, aged, or long-aged), Cate provided bartenders with a clear, flavor-driven matrix. This system allowed mixologists to replicate complex vintage recipes with precision and understand exactly how different rums interact with citrus, syrups, and spice.

Part III: The Bible of Exotic Cocktails

In 2016, Martin and Rebecca Cate published Smuggler’s Cove: Exotic Cocktails, Rum, and the Cult of Tiki.

  [ HISTORICAL CONTEXT ] + [ RUM SCIENCE ] + [ 100+ RECIPES ] ──► [ JAMES BEARD AWARD ]

The book became an instant classic, winning the prestigious James Beard Foundation Award for Best Beverage Book. Far more than a collection of recipes, the book serves as a definitive textbook covering:

  • The Three Waves of Tiki: Detail-rich historical breakdowns of the Golden Era (1930s–1950s), the Decline (1970s–1980s), and the Modern Revival.

  • Home Bar Construction: Practical guidelines for lighting, wood selection, decor layering, and sourcing authentic vintage artifacts.

  • The Rant & Rationale of Rum: A comprehensive guide to understanding rum regions, fermentation science, and sugarcane derivatives (pure cane juice vs. molasses).

Part IV: Smuggler’s Cove and Beyond

Smuggler’s Cove consistently ranks among the top bars in the world, garnering accolades from Tales of the Cocktail, The World's 50 Best Bars, and national publications.

Cate’s influence extends far beyond San Francisco. He has opened and collaborated on several other standout bar concepts across North America:

Venue Location Specialty & Concept
Smuggler’s Cove San Francisco, CA The flagship temple of exotic cocktails and over 500 rare rums
Lost Lake (formerly) Chicago, IL Collaborative project bringing modern tropical craft to the Midwest
False Idol San Diego, CA Speakeasy Tiki sanctuary built inside Craft & Commerce
Hale Pele Portland, OR Partnered with Blair Reynolds to create a lush, volcanic-themed lounge
Max’s South Seas Hideaway Grand Rapids, MI A massive two-story museum-grade Tiki restaurant and bar

The Legacy of Passion and Rigor

Martin Cate proved that Tiki is not a kitschy relic of the past, but a legitimate, world-class culinary art form. By combining rigorous spirit scholarship with pure theatrical joy, Cate ensured that the golden age of the tropical cocktail is not just preserved, but continuously evolving for generations to come.
